Adobo Bloody Mary
- Cook Time: 1 Hour
- Serves: 5

Directions
Pork Adobo
- Cut Pork Belly into cubes
- Brown pork belly in a pot with oil of your choice.
- Add garlic, bay leaves, red wine vinegar, peppercorns and water. Bring to a boil.
- Simmer for 40 minutes to 1 hour
- Deep fry or pan fry pork belly on high heat for 2-4 minutes each side just until crispy
Bloody Mary Mix & Drink
- After making Pork Adobo, strain and save the brine.
- Roast 1 jalapeño for five minutes, cut in half, deseed and devein if desired.
- Blend all ingredients excluding tomato juice and vodka in a food processor
- Add 1oz of food processor mix and 1oz of tomato juice, and 1.5oz of vodka to cocktail shaker. Shake with ice.
- Pour over ice in Furikake rimmed glass.
- Garnish with fried pork belly, celery, and remainder of roasted jalapeno.

Bloody Mary Mix
• 1/4 tsp Dashi Stock Mix
• 1 tsp Horseradish
• Juice of 1 Calamansi (or 1 tsp Lime Juice)
• 1 tsp Onion Powder
• 1 tsp Celery Salt
• 1/2 Roasted Jalapeno
• 1/4 Cup Roasted Red Pepper
• 1 1/2 tsp Worscestershire Sauce
• 1 tsp Black Pepper
• 1/4 Cup Adobo Brine
• 1 TBSP Roasted Garlic Japanese Barbecue Sauce
• Tomato Juice
• 2oz Vodka
• Furikake for Rim

• 3 lbs pork belly
• 4 cloves garlic
• 5 dried bay leaves
• 2 cup rice wine vinegar
• 1 tablespoon peppercorn
• 3 cups water
• 1/4 cup Original Japanese Barbecue Sauce
