SPAM® Fried Rice

Directions
Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add SPAM® cubes and cook until golden and crispy on all sides, about 5–7 minutes. Remove from pan and set aside.
In the same pan, lower heat to medium and add a bit more oil if needed. Pour in beaten eggs and scramble until just set. Set aside
Add onion and the white parts of the scallions. Sauté for 2–3 minutes. Stir in peas and corn.
Add cold rice to the pan, breaking up any clumps. Stir everything together and let it sit for a minute to crisp up before tossing again.
Return SPAM® cubes and eggs to the pan. Drizzle in Bachan’s Sweet Pineapple Japanese BBQ Sauce. Stir-fry everything together until well combined, caramelized, and glossy.
Turn off heat. Top with scallion greens, a drizzle of extra Bachan’s, and garnish with sesame seeds or green onions

• 2 cups cold, day-old cooked rice
• 2 eggs, beaten
• ½ cup diced yellow onion
• ½ cup frozen peas and corn
• 2 scallions, chopped
• 2 tablespoons neutral oil
• Sesame seeds or green onion to garnish
