Chicken Bacon Onion Rings

Directions

  1. Slice the onion into 1/2 inch slices
  2. Place 1/4 pound of ground chicken on the inside of a large sliced onion. 
  3. Form a hole in the middle and insert a smaller onion that will fit on the inside of the larger onion.
  4. Season the ground chicken with your favorite burger rub, then carefully wrap with some bacon. Season all sides of the bacon using one of your favorite BBQ rubs. 
  5. Smoke the stuffed onion rings at 275°F for 60 minutes using cherry wood.
  6. Brush Bachan’s Japanese sauce on the outside of the bacon for the last 15 minutes.
  7. Remove it from the smoker once the sauce tacks up and the chicken reaches an internal temperature of 165°F.
  8. Serve them up with sauce and enjoy!

  • 6 slices of thin sliced bacon
  • 1 cup shredded cheddar cheese
  • 2 tbsp BBQ rub
  • 2 tbsp Bachan’s
  • 2 large onions
