Grilled Chicken Skewers

Directions
1. If desired, soak the bamboo skewers in water for 2 hours to prevent charring.
2. In a large bowl, mix together the oil, curry powder, fish sauce, and sugar. Add the chicken and massage to coat. Marinate for 1 hour minimum and up to overnight.
3. Thread the chicken onto the skewers, about 4-5 pieces per skewer.
4. Oil the grill and grill over medium-high, flipping as needed, until cooked through and charred, about 3-4 minutes per side.
5. Remove from the grill and enjoy dipped with Bachan’s The Original Dipping Sauce.

• 2 lbs boneless, skinless chicken thighs cut into 1/2 inch pieces
