Hawaiian Burger


1. Hand form 1/2 lb patties, then season well. Coat liberally with Bachan's and let marinate for 10 minutes, allowing the Bachan's to coat the burger and soak into the meat.

2. If utilizing a smoker, heat smoker to 225 and let patties cook until an IT of 140, then remove and pan sear on cast iron at 450 until an IT of 160. Pull and let rest. If utilizing a standard grill, grill on high heat until and IT of 140, then pull and move over to cast iron and finish off until an IT of 160. Top with cheese to melt about 3 minutes before target temperature.

3. While the burgers are cooking, sear pineapple until caramelized on the outside and toast the roll. Slice Red Onion at this point.

4. Now it's time for the burger. Start with the toasted roll and top with Green Leaf Lettuce, Patty, Pineapple, Red Onion, then add a bit more Bachan's over the top to your taste. Top with bun and enjoy.

1 Red Onion
Kaiser Rolls
Pineapple Rings (Can or Fresh)
White Cheddar Cheese (I used Tillamook Extra Sharp)
Green Leaf Lettuce
Your Favorite Burger Seasoning (Preferable one that works well with umami flavors)
