1. Cook your frozen fries according to package instructions or for about 10-15 min at 400ºF in an air fryer, shaking halfway through.
2. Add the sliced onions and 1 tbsp Bachan's Japanese Black Garlic Mayo to a non-stick frying pan over low heat. Cook, stirring occasionally, until the onions brown and caramelize, about 15 min. Remove from the heat and set aside.
3. Meanwhile, heat a cast iron skillet or griddle over medium-high heat. Butter and toast the buns until golden brown. Set aside and turn the heat to high.
4. Divide the ground beef into four equal portions and gently roll into loose balls.
5. When your cast iron skillet is smoking hot, place two beef balls onto the skillet and immediately smash until very flat. Season with salt and pepper.
6. Cook for 1 to 2 minutes, or until deeply browned and crispy. Flip, season with salt and pepper and top each patty with a slice of cheese.
7. Once the cheese is melted, transfer the burgers to a plate and repeat with the remaining two beef balls. Once the cheese is melted on the remaining patties, stack the reserved patties to make a double cheeseburger.
8. Assemble the burgers by spreading a layer of Bachan’s Black Garlic Mayo on the bottom bun. Top with the caramelized onions and the double stacked patties and then the top bun. Serve with the fries which should be just about ready by now. Enjoy immediately.
