Smoked Brisket Burnt Ends

Directions

  1. Begin by trimming the excess fat and silver skin off of the brisket. Place the fat trimmings in a foil pan for beef tallow.
  2. Lightly coat the brisket with yellow mustard then season it with a 50/50 mix of black pepper and salt on all sides.
  3. Place the brisket and foil pan of fat trimmings on a smoker that’s preheated to 250F. Place the point towards the hotter end of the smoker.
  4. Let the brisket smoke for 6 hours, once the bark is set begin spritzing it with beef broth.
  5. When the brisket reaches an internal temp of 175F, place it on some aluminum foil, then pour ½ cup of the beef tallow over top. Tightly wrap the brisket, then place it back on the smoker for 2 more hours.
  6. Remove the brisket when it reaches an internal temperature of 195F. Cut in between the point and the flat to separate the two muscles. 
  7. Remove the excess fat from the point, then cut it up into 1.5 inch cubes. Place them in a foil pan with Bachan’s, brown sugar, honey and a BBQ rub. Cover with aluminum foil then place it back on the smoker for 30-45 minutes.
  8. Wrap the brisket flat back up on the aluminum foil and let it rest for at least 1 hour, then slice it against the grain. Serve this warm, or save it for another dish.
  9. Uncover the foil pan and baste the burnt ends with the juices in the bottom of the pan. 
  10. Remove the burnt ends when the sauce begins to thicken up on the meat. Garnish with sesame seeds, green onions and chili flakes then enjoy!
